Did you know that there are SO many (creative) ways to prepare this cruciferous vegetable? Growing up, the only way we ate this was in it’s raw form typically alongside some broccoli… Not very adventurous, right! I have a friend that follows the Paleo Diet and through her, found out I could make cauliflower rice. Things like this make me excited; little things in life-ha!
Cauliflower is an excellent source of Potassium, Vitamin C and Glucosinolates. Per Livestrong.com, glucosinolates “activate the body’s detoxification system”.
