First, I want to wish you a very Happy Thanksgiving!!!

Recently I have made the decision to follow the Paleo Diet with the hope that this will help with a certain health thing I am dealing with. I don’t want to dive into my health situation nor additional specifics regarding the Paleo Diet during this post. What I really am wanting to discuss is something that I have found to really enjoy that is found in some Paleo recipes. The Sweet Potato! My FAVORITE recipe (my husband really likes it too) is from the New York Times Bestselling cookbook NOM NOM PALEO by Michelle Tam and Henry Fong. It is their Sweet Potato Hash. It is soooo delicious! Another bonus, it is a quick Paleo recipe. What makes it even more filling and fantastic is that they show that you can put a sunny-side-up egg on top.
