I cheated a bit this weekend, so today I was ready to get back on track! After a walk and a strength training DVD I made up a batch of my superfood soup! There are many super foods that you can throw into this basic soup recipe.  A super food is a nutrient rich food that is beneficial for the body.  I tend to just use what I have in the refrigerator at the time.


Today I used the following veggies:

Head of cabbage, chopped

4 carrots, chopped

6 celery stalks, chopped

1 cup Brussels sprouts, quartered

1 bunch kale, chopped

2 zucchini, chopped


I also added in:

64 ounces vegetable broth

1 T minced garlic

1 T Wildtree vegetable boulloin soup base

1 T lemon juice

1 T soy sauce

a dash of Wildtree worcestershire sauce


Add everything to a large pot and boil on the stove until the veggies are tender, usually about 30 minutes.  The pot will be jam packed with veggies, but the veggies will all cook down and you will start to see liquid in the pot!
