I’ve been working hard towards healing the inflammation in my gut w/ the hope that it will put my Grave’s disease in remission! If not that, at least reduce some of my symptoms. I’ve been following the AIP diet which is a more restrictive form of Paleo. So many easy choices for my meals are no longer an option. I’ve had to buck up and spend more time in the kitchen. So many dishes are dirtied up now! I told my husband that we need two dishwashers in order to keep up-ha!
With the common trigger foods being removed from my diet, I’ve had to do a lot of searching for AIP-friendly meals as well as create my own.
Here is my latest, AIP Pancakes:
I really like their flavor and texture. Yum!
1 yellow plantain
1/3 cup coconut flour
1/3 cup arrowroot flour
1/3 teaspoon baking soda
1 tablespoon maple syrup
2 tablespoons melted coconut oil
2 tablespoons fresh lemon juice
1 gelatin “egg” (What is this? Click here)
Preheat oven to 350 degrees and line baking sheet w/ parchment paper
Combine all ingredients in the food processor and pulse until mixture is smooth
Spoon onto parchment paper and flatten w/ back of spoon until have desired size (I usually have enough to make 6 or 8)
Bake for around 18 minutes and flip pancakes over (want to be golden brown) and bake for another 5 minutes
